The Dollar Spot

Here is a little Friday happy for you...I found these cute headbands in the dollar bins at Target. They are reversible, and there were a few different color selections. I always use something like this when I go to the gym because I don't have "ponytail" hair. I wish they had them in little girl sizes too!

SPT

I have been checking out Lelly's SPT challenges for a while now, but I have never really posted...It is usually a few weeks after the fact that I even think of something. So here I am just one day late...not bad.

if this is your first earth day spt, do you consider yourself a part of "the green generation?"

I do consider myself part of the green generation. I feel that I am a pretty good recycler. We have one bin for paper and another for cans, glass & plastic bottles. We have always had weekly curb side recycling by the city.... such a huge help! And they have greatly increased the items accepted in the past few years. This is our paper bin after one week...I put everything in it...newspaper, cardboard, any packaging, cereal boxes, junk mail, catalogs, magazine,etc.

I am getting better reusing my shopping bags....I only seem to remember when I go to Trader Joe's and I grab my cooler bag from there...but I never remember when I pop into Super Target or Harris Teeter....so I am making that a goal. I will use the paper bags I have from Trader Joe's and Whole Foods until they wear out...and then pick up a few more cute reusable ones!


I have seen several of the Oprah shows lately on wasting, and the earth day special yesterday with Julia Roberts. I feel at times like the message of these programs is speaking directly to me....stop using so much plastic, read labels, cut the chemical use in your home, buy more organic, do you know what you are feeding your children???...I have all this information (misinformation???) spinning in my head, and I need to figure out what is best for our family. The issue of BPA in plastic is weighing on me right now...I have read some, but done nothing...I have A LOt of plastic cups, etc in this house....where do I begin and what do I replace it with??? I will struggle with this until I figure something out.

Ohhh so good!

I think this was one of the easiest, most delicious things that I have ever made. But I shouldn't be surprised, because the Barefoot Contessa rarely disappoints. It all started when I saw this episode. We have a standing Friday night plan...Pizza with the Glovers. We met Sarah & Tyler 4.5 years ago in birthing class, and slowly became great friends. Our Meredith and their Jacob have been raised like brother and sister...and act accordingly...lots of love-hate! Our relationship with our entire birthing class is worthy of its own post another time.

I whole-hartedly feel that you shouldn't cook on Friday nights...ever...pizza, mexican,go out, stay in...but Friday nights are special. When the kids we pretty young we established a regular routine of meeting up at casual restaurants on Friday nights...but after just a few embarrassing meltdown episodes, we turned it into a order pizza in, toss up a salad, grab a bottle of wine, maybe fix a dessert Friday night dinner...we switch hosting duties back & forth. It has been great!...But back to Ina...I saw this episode one night and thought it would be great for a Friday. Every once in a while we get crazy and grill up fajitas, or make homemade pizza, etc.

I thought caesar club sandwiches would be super tasty, but it was the cupcakes that reeled me in...peanut butter and chocolate...a favorite of Kevin's. And they were amazing! To be honest, I just used a box mix to make the chocolate cupcakes....I mean who really needs to make cake from scratch? But this frosting was like heaven...try if for yourself!

Kathleen's Peanut Butter Icing:
1 cup confectioners' sugar
1 cup creamy peanut butter
5 tablespoons unsalted butter, at room temperature
3/4 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1/3 cup heavy cream

Place the confectioners' sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth.
